Picante de Pollo

Picante de pollo is a nice dish that is easy to prepare as it just sits there and cooks for about 1.5 hours. I am going to try it in a crock pot one of these days.

2 tablespoons vegetable oil
1 each whole chicken — cut up (with or without skin)
1 each white onion — julienned or chopped
8 ounces canned tomatoes — peeled and chopped
1 cup frozen peas
1/2 cup italian parsley — chopped
3 cloves garlic — chopped
2 cups chicken broth
1 tablespoon Aji Amarillo powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon black pepper
1 teaspoon salt

In a large pot, heat oil and add chopped onion, garlic, parsley, aji, and cumin. Cook till onion is softened

Add chicken chopped tomato (or 5oz sauce), oregano, and the broth to cover all the ingredients completely.

Cook over high heat till the mixture boils. Lower the heat and cook 1/2 hour covered.

Remove cover and cook for 1 hour or until mixture is reduced. Add peas 10 min before serving. Salt/pepper to taste.

Serve garnished with fresh chopped Italian parsley on top.
